Mom's Apple Pork Chops

2012 was not my favorite year. It was a tough year. It was a year when I was reminded of my toughness. It was a year in which I was reminded of priorities. I made some great new friends. I relied on some great long time friends. I am not going to lie; the tragedy at Sandy Hook Elementary was very personal to me. I became a mom when I had my six year old. She changed my world. All in Newtown have been in my thoughts and prayers this holiday season. With all the happened, I have blanketed my two daughters with hugs and kisses. I have snuggled and squeezed more than they might wish but, they are only little once. We spent time with the extended family laughing and being reminded that my babies are growing up. We had a magical Christmas Day snowfall. It is still cold in Dallas.

For those who can't stand the thought of leaving the house, have some Apple Pork Chops. And since I have several readers who don't eat pork, you can make this with chicken breasts.

 Mom's Apple Pork Chops:
 Boneless Pork Chops or boneless skinless chicken breast
Apples - Sliced (for every 2 pork chops, you need 1 apple)
Yellow Onion Sliced (if you are making 4 pork chops, 1 medium onion will do)
Apple Cider Vinegar

 Wash and dry pork chops. Sprinkle with a little Celtic sea salt. Over medium heat, add either bacon fat or chicken fat and place your pork chops. Cook for 3 minutes then, flip and cook for 3 minutes. Remove the pork chops. Add more cooking fat. Throw in the onions and apples. Cook until the onions are translucent. Add 2 tablespoons of apple cider vinegar. Get all the yummy bits off the bottom of the skillet. Bring to a simmer and add your pork chops back in. Cook until done. Serve with the apples & onions.
