Is that what we are having for dinner?

My precious daughter sat down for dinner tonight took one look and asked "is that what we are eating for dinner?"

Um, yeah, that is the general idea. Dinner was chicken leg quarters that had cooked in the crock pot with BBQ sauce and veggie pancakes. The kids also had fruit. Veggie pancakes are easy side dishes. They can also be adapted if a vegan stops by for dinner.

Mom's Veggie Pancakes

two zucchinis - shredded (or really ANY veggie that you can shred)
one small onion -shredded
1/4 cup of coconut flour
2 tbsp of melted butter or coconut oil
4 beaten eggs
1 tsp garlic powder
1/2 tsp chili powder
1/2 tsp of celtic sea salt

Mix all that stuff together. Cook on a griddle in a little butter/bacon fat/coconut oil. Ladle out about 1/4 cup and smoosh flat. These will cook up a little flat. Cook until browned.
I serve them with some really good sour cream.

Ok, here was my mistake tonight. I didn't peel the zucchini first. So, the 6 year old saw green flecks. Yeah rookie mistake.
