Comforts of Home

I can't explain it. I love meatloaf. Thoughts of my mom's meatloaf makes me feel loved. Instead of baking it in a loaf pan, she would use a small casserole. I make meatloaf at least once a month. I make a bunch so that I can have leftovers.

I am doing a 9 week challenge. So, I had to make a couple of adjustments. Like, BBQ sauce on only p[art of the meatloaf and had to use a different brand of breakfast sausage. Well, I am getting ahead of myself....

Mom's World Famous Meatloaf.

1 pound of grassfed ground beef
1 pound of bulk pork breakfast sausage
1 tbsp of garlic powder
1tbsp of onion powder
1/4 tsp of chili powder
3 eggs
2 cups of kale - chopped
optional:
finely chopped carrots or onions

Mix everything together. Cover with BBQ sauce. I put mine into a 8X9 baking dish and baking dish. It bakes for 30 minutes at 375.

Like I was saying, the breakfast sausage I normally use had sugar as an ingredient. But, I had a different brand that was simply pork and sage. And since I am trying to avoid sugar/honey, I skipped the BBQ sauce. Honestly, I put some hot sauce on mine when I served it.
