Heavenly coffee


So, I am on day 20 of a 9 week paleo challenge. I have only cheated on the diet a couple of times. And, honestly, if I am going to cheat, it is going to be for another glass of wine not for a gluten free cupcake. But, long slightly brutal workdays in my office this week has brought about a rich, delicious (dairy free) latte. We made these with coffee but, tea drinkers could easily do this with tea.

I am guessing at the measurements. Start with 16 oz of fresh brewed coffee. Do yourself a favor, buy great beans. In east Dallas, I recommend beans from Culitvar Coffee, White Rock Coffee, or Noble Coyote Coffee Roasters. Also, use a good spring water or filtered water. Put half of the coffee to your cup, add 1-2 tablespoons of coconut oil, 1/4 teaspoon of raw, 100% cacao powder, 1/8 teaspoon of ground cinnamon, and pinch of celtic sea salt. Blend with an immersion hand blender.

It is rich and decadent but not sweet. Have a cup and enjoy, Mom

Secrets, Superheroes, and Cauliflower


I have a secret. I have only shared this once, maybe twice in my whole life. My husband may suspect but, I have never confirmed it. I am one-eighth superhero. Seriously, I have super powers.

My greatest super power is deciding to change my diet, my food, what went on my plate and into my mouth. I also find time to workout. Even if it means turning off the TV to go to sleep early and get in a workout before the day starts for the rest of the world.

I am amazed every week by the people who feel that they need to defend their plate and workout routine to me. I am just trying to be healthy and set a good example for my kids. I also love helping people when they ask for help. Instead, people tell me that they could never eat like I do or workout with any regularity then, I hear the excuses why. So, I have come to the conclusion I must be a superhero. Ok, really I am so clumsy, probably just one-eighth superhero. But, that has to be the explanation right?

Really, there is nothing at all special about me. I just do it. I cook. I shop for groceries. I don’t let processed food into my house. I get into the gym. I get sleep. I talk to my kids about my goal of playing chase with their kids. I could put off being healthy or I can start today.

Here’s the recipe for today:

Superhero Cauliflower:

Chop a head of cauliflower. You can chop it by hand or grate it in the food processor.
Put a skillet on medium heat. Throw in a tablespoon or two of grassfed butter or coconut oil. As soon as melted, throw in the cauliflower. Sprinkle with ½ teaspoon of celtic sea salt. Stir in 5 minutes. Add 1 tablespoon of grassfed better. Stir in 5 minutes. Keep stirring every five minutes until some of the cauliflower is browned.
